The modern shrub has roots in 17th-century England, where vinegar was used to preserve fruits in the era before refrigeration was available. This practice was brought to Colonial America, where fruit preserves made with vinegar were commonly used to create a sweet-and-sour syrup.
Shrubs experienced a significant comeback around 2011, driven by the craft cocktail movement and a renewed interest in artisanal, natural ingredients.
