From Farm to Jar…Spotted Horse Provisions is passionate about creating sustainable food procurement and preservation pathways that are healthy, delicious, and open-ended. Though our focus is to use regional produce, we consider the carbon footprint of our imported products and try to minimize our impact. We also hope to serve as a model for neighborhoods or cities to bound together in community growing and sourcing. Spotted Horse flavors and ingredients are designed to bridge many cultures just as our founder’s heritage does. Her world travels and farm to table upbringing informs the way she approaches seasonally fresh and seasonally preserved ingredients, versatility of application, and quality for accessible prices.

Spotted Horse Provisions is a disabled woman-owned business that makes sustainably-minded artisanal pantry provisions inspired by the blended heritage and world culinary travels of a woman starting over. It is also a message of hope and survival in the aftermath of trauma. We are committed to engaging in sustainable practices from sourcing, to production, to packaging, to reducing our overall carbon footprint, to offering discounts on jar returns. Spotted Horse Provisions celebrates NJ and PA by partnering with farmers and draws upon 4 generations of canning practices to preserve the freshest flavor possible. All of the original recipes are a blend of Welsh and Iraqi Sephardi-inspired flavors. We produce tomato sauces, jams/jellies, harissa pickled vegetables, zero-waste shrubs/vinegars, zero-waste pestos, spreads, and seasoning blends.

amanda newman
Amanda Newman is the owner, maker, and recipe maven behind Spotted Horse Provisions. She is a full-time professor of Art Education at Moore College of Art & Design, and has worked in arts education for over 3 decades. She is also a board member for two nonprofit arts education organizations, Young Audiences NJAEP and Stockton Rush Bartol Foundation. Amanda is a fourth generation canner and jam maker who spent her childhood alongside her grandmother Nana Betty preserving the best of NJ produce, and cooking with both her parents who had passions for the culinary arts. She enjoys celebrating her blended Sephardi and Welsh heritages in her creations. Amanda traveled the world with her late husband, and draws on her deep knowledge of flavors in every ingredient she chooses for SHP products. When not in the classroom or the kitchen, Amanda is relaxing with her 2 corgis, 3 cats, and 2 donkeys. She is an avid cook, and enjoys feeding all the people in her life. Though her art practice has now taken a back seat to her busy SHP production schedule, she was a professional photographer and jewelry designer having operated Spotted Horse Designs for 15 years. Spotted Horse Provisions is a love letter to women who have survived deep trauma and life-changing circumstances only to come out the other side thriving and celebrating their identity and strength. When she says "Every Flavor Tells a Story", she truly means it because every product she makes is inspired by her lived experiences.

Simon Matthews (he/him), Production Manager, comes with over 20 years experience in the high-end restaurant industry, and is a certified Sommelier. He now refers to himself as a "Jam-melier"! Simon, a.k.a. OddJob and Produce Gopher, can get the oddest of jobs done, and locate the hardest to find regional produce. His British accent makes for the swankiest sounding market booth, and he is often mistaken as a James Bond / Pierce Brosnan look-alike. He is a talented photographer (check out his work @reflectionsofmyreflections) and avid auto enthusiast, and enjoys rock climbing and hiking in NJ, PA, and NY. In the wintertime you might catch him snowshoeing those very same trails. Simon is a keen cook, and likes to experiment in the kitchen yet he is the first to admit most ideas are disasters.
